3-Ingredient Juicy Dry-Brined Pork Chops

Just kosher salt, pepper, and chops! Yep! That’s all it takes to grill THE MOST juicy and tender pork chops you’ve ever tasted!! Just enjoy as is, or baste with a little barbecue sauce at the end if you’d like. No matter how you fix them, they’re just simply the best! 

 

 

We were right in the middle of a nasty heatwave, and I wanted to just toss something on the grill and not mess with a whole pile of ingredients. It was just too hot to even move.

So, I decided to skip the whole marinade thing, and just go simple-simon old school!

And I’m so glad that I did!! I had forgotten how ridiculously easy and delicious dry-brining  really is! 

 

 

 

 

You’re absolutely going to love this! 

It’s so easy, that you’ll literally smack yourselves on the forehead. 

 

First, I always use thin-cut, bone-in pork chops for this “dry-brining” method. Plus, they cook extremely quickly on the grill, so it’s a win-win for a super simple, and fast-to-the-table, weeknight meal! 

Just place a rack, any kind, over a baking sheet.
Place the chops on top.
Season both sides well with kosher salt.
Place into fridge, UNCOVERED. 

 

And that’s all there is to “dry-brining”!!

I know!!! Right?? EASY. PEASY!! 

Then just add pepper right before cooking! 

 

 

 

 

I highly and strongly recommend that you do cook these on the grill versus pan-frying, though. 

They take just a few minutes per side, and the color and caramelization you get from the grill and dry-brining, is INCREDIBLY gorgeous!!

 

 

 

 

I mean, seriously, check these babies out!!

They make such a beautiful presentation, that, as simple as they are, they are totally company-worthy!!

After all, we do eat with our eyes first! 

 

 

 

 

*I did go the extra mile and added barbecue sauce during the last couple of minutes, but you don’t have to if you don’t want that on there.

 

 

 

 

If you do, just make sure to grill the sauce on both sides to set it.

What guest wouldn’t want to fight over these? 

 

 

 

 

I simply served ours with a humble baked potato, and a tossed garden salad with red onion and garden-fresh tomatoes.

 

 

 

 

Unpretentious, and simply divine!!

Who can beat that?? Especially when it’s disgustingly hot inside and out!

3-Ingredient Juicy Dry-Brined Pork Chops 

 

Ingredients:

bone-in thin-cut pork chops
kosher salt, do not sub regular salt
regular black pepper
(*your favorite barbecue sauce is optional) 

 

Directions:

Place a rack over a baking sheet. Place chops onto rack. Sprinkle each side of chops with a nice amount of kosher salt. Not too heavy, not too light. Just a little more than if you were just seasoning them to cook. 

Place into refrigerator for up to 2 days, completely uncovered, but for at least 4 – 6 hours. *Overnight is best, though. 

Season each side with black pepper and get the grill going, (unless you are frying them).

Pan-fry in a little butter, or grill, for 3-4 minutes per side over medium heat. *These are truly best grilled, as they instantly get gorgeous color, picture-perfect grill marks, and beautiful caramelization!! 

Baste with barbecue sauce during last 2 minutes if adding. Turn chops as needed to set sauce.
