Missing all those fun and exciting nights going to the State Fairs and local carnivals with your best friends? The rides, the lights, the games, and all of that DELICIOUS fair food? Well, have a little fun and make some crazy-good fair food right at home! These Chili Cheese Corn Dog Nachos were delightfully delicious, and something the entire family is sure to enjoy!
I know. I’m really missing all of the fun, summer stuff to do, too! Especially the fairs and carnivals!! From the Haunted House to the House of Mirrors, the Ferris Wheel, Tilt-a-Whirl, and the Merry-Go-Round, the bumper cars and Whack-a-Mole, … but ohhhh. That awesome, and devilishly delicious, sinfully-awesome, fair food!!
Well, no reason to completely miss out any longer! We’ll just make it at home, and have a little “fair fun” right in our own backyards! Why not, right?!
Just dig out and dust off that corn hole game, make a balloon board with darts to pop, offer some silly prizes for the kiddos, and make some CRAZY-good, FUN-FAIR-food, and we’ve got a little “mini fair” right in our own backyards!!
Reminiscing the fair food I personally enjoyed the most, I went straight to my favorites, (that wouldn’t be the fair without them!), which were always the basket of deep-fried, fresh veggies, and a fresh-out-of-the-fryer corn dog with mustard!
So, recently, I decided to just recreate my own favorites, and combine them into a crazy-good, “fair-concoction” right at home! I just cut loose and had some SERIOUSLY needed fun!!
We really needed this more than you could ever know, and BOY was this happy mess totally AWESOME!!!
These are stupid-easy to make, too!! So you and the kiddos can just have fun, and top each serving with whatever your happy hearts desire!
So. Ok. Here we go!
I started by making my easy-peasy Chili Dog Chili. You can cook it down as long or as little as you want. The longer you cook it, the more the liquids evaporate and the thicker it gets. I wanted ours super thick, (so the cooked corn dog batter wouldn’t get soggy), but you can cook yours to whatever consistency you like!
Once that’s done, you’re one toss away from winning that goldfish! The “hard part” is over! And it didn’t even cost you 47 tickets!
I then prepped what we wanted to pile on. We went with shredded lettuce, chopped tomatoes, finely chopped red onions and fresh green bell peppers, and of course, some pickled jalapeño slices!
Next, I totally cheated. I nuked some frozen corn dogs instead of making them homemade. I know. I’ll give back the goldfish.
But, these, in my defense, were actually pretty surprisingly awesome, and could not have worked out better!!
(I’ll take that goldfish back now.) This was definitely a win!
Just remove the sticks after cooking them, and slice them. Done.
Then ladle that wonderful, thick and rich, and nicely spicy, “chili dog chili” right over the top.
Then just nuke your cheese and green chilis into a lusciously creamy mess, and ladle that right over the chili!
Then start piling on your toppings! I started with large handfuls of shredded lettuce that I lightly salted and peppered to season.
Next up, some juicy, chopped, summer tomatoes!
Then some finely chopped, mild sweet red onion….
…and some crispy-crunchy chopped green bell pepper! (*REALLY good!!) A must-add!!
And here comes the super-fun part! The drizzles of sauces!!
I added Sriracha hot sauce, my homemade Alabama Sauce, and some purchased avocado salsa!
And we’re in the homestretch! Almost done!!
I crowned this beautiful plate with a nice spoonful of sour cream….
….added some jewels of jalapeños, and sprinkled the whole glorious mess with some shredded Mexican Blend shredded cheese!!!

THIS. WAS AMAZING!!!
See? We can still have fun right at home!!
So, how about this weekend, just set up some fun stuff to do right in your own backyard. Set up some easy games to play, and maybe even dig out that badminton or crocket set and just have a blast!

State Fair Chili Cheese Corn Dog Nachos
Serves 1 – 2 very hungry people!
Ingredients:
1 – 2 cooked corn dogs, stick removed and sliced
chili (thick), *preferably my homemade chili dog chili
nacho cheese, recipe follows
shredded lettuce
chopped tomatoes
finely chopped red onion
finely chopped green bell pepper
fresh cracked salt and black pepper
drizzles of hot sauce, avocado salsa, and my homemade Alabama Sauce
dollops of sour cream
pickled jalapeno slices
shredded Mexican Blend cheese
For Nacho Cheese Sauce:
1 cup Cheez Whiz, more if desired for a milder cheese sauce
1 (4 oz.) can chopped green chilies (undrained)
Directions:
Make my homemade Chili Dog Chili, set aside. (Or just nuke your favorite canned or your own homemade.)
In small bowl, microwave Cheez Whiz and green chilies until cheese is melty according to cheese manufacturers directions. Stir until creamy.
Microwave or deep-fry 1 – 2 corndogs until cooked according to the manufacturer’s directions also. Remove stick, and slice.
Place slices onto a serving plate or in a serving basket. Ladle chili over the slices, then the cheese sauce.
Top with whatever toppings your heart desires! Just like the fair! Be sure to serve with 2 forks and share with your best friend! Enjoy!!
