Pesto Alfredo Chicken Sandwich with Mushrooms and Onion Rings

This amazing sandwich is as simple as simple gets to prepare, yet it’s one of the most incredibly flavorful chicken sandwiches that I have ever, ever tasted! ALL of the ingredients play an important role, but, –OH– MY– GAWD– that sauce!! This easy sandwich truly is a “wow experience” that you simply must make and just see for yourself!

Ooooohhhhhh, MAN!! Yep!! This chicken sandwich was one for the forever books. We were floored. And it’s just that easy! What more could one ask for?! Right?! 

Just. Simply. DELICIOUS. 

 

All of the ingredients play an important role…but WOWzers…that sauce!!

Everything came together so wonderfully that it made our hungry tastebuds SING. Just a super fun chicken sandwich that will have everyone at the table sitting the first time you call them to supper, because the aromas from this sandwich are going to waft through the entire house driving them crazy! (Us cooks are torturous like that.) 

 

 

 

I’m sharing the products that I can always count on, because, products can differ so greatly that they can drastically change the outcome of a recipe. So, I want to make sure that you can see what I have used that works well for me. You can, of course, use your own favorites, but I cannot guarantee that the outcome will be the same. 

So, you do you, and I’ll do me. And I’m sure everything will work out just fine! To help and to share is always my only goal! 

 

 

 

These two products have helped me out tremendously. The above is the “cheater chicken breasts” that I use when I’m tired and don’t care to annihilate my kitchen making my homemade. And below is my favorite shredded cheese blend for pizzas, sandwiches, and anything else that I make when I want a flavorful italian-style cheese that melts beautifully! 

 

 

 

 

This sandwich starts off with a brioche bun that has been slathered with butter, sprinkled with garlic powder and dried parsley, and then grilled in a pan to toast the insides. 

I then top it with baby spinach leaves. Add as few or many as you like. And don’t worry, if you don’t care for spinach, they don’t taste like spinach. They’re just so very good for you adding nutrients that you don’t get from plain old iceberg lettuce. Sneak in those extra vitamins and minerals every chance you get! They’ll never now. 

 

 

 

 

Next up after that, will be your chicken breast. I have come to appreciate the extra hand in the kitchen by using Aldi’s Kirkwood breaded chicken breast filets. Here they are frozen and don’t look bad at all!! : 

 

 

 

 

Here they are after baking but before the cheese. See? They look dang good! And they TASTE good, too. 

 

 

 

 

 

Now, cheese lovers always have their very own preference. 

I’m a “gobs of cheese, melty, but not overly done” fan. I live for that “cheese pull”! 

 

 

 

 

But some like that lightly toasted cheese for extra flavor! Nothing wrong with that, either! So, watch after you add it, and just remove it when it’s done to your own personal liking. 

 

 

 

 

Once that is assembled, we are on our way and almost done! 

 

 

 

 

Just top it with the sautéed mushrooms and baked (or fried) onion rings! I baked some Nathan’s Onion Rings and they were perfect!

 

 

 

 

And here comes one of the best parts!

OH. MY. GAWD. That simple-easy sauce!

(Try not to eat it all right straight outta the pan. Save some for your sandwich now!) 

 

 

 

 

Pour a RIVER of that glorious tasting, pesto-alfredo sauce right over the top! 

Then place on the top bun, grab a heap of napkins, and GET IN THERE. Hurry, though! Because if someone wanders into the kitchen, you’re gonna have to share it! 

 

 

 

Honestly, you really do have to make this incredibly delicious “Pesto Alfredo Chicken Sandwich with Mushrooms and Onion Rings” ASAP.

Pesto Alfredo Chicken Sandwich with Mushrooms and Onion Rings
Yield: 1 sandwich

Pesto Alfredo Chicken Sandwich with Mushrooms and Onion Rings

My hubby said that this was the best chicken sandwich he's ever had. The best one yet!! Now you have to make it for yourself! I'm sure you'll agree!! Knocked our socks off!!

Ingredients

  • 1 breaded chicken breast filet
  • small handful of shredded mozzarella and provolone cheese
  • 1 brioche bun, split and buttered inside, sprinkling of garlic powder and dried parsley, grilled until toasted
  • 6 - 8 fresh baby spinach leaves, as you like
  • 2 - 3 onion rings, cooked
  • 4 - 6 slices fresh mushrooms, cooked in 1 - 2 Tbl. butter
  • For Sauce:
  • 1/4 cup alfredo sauce
  • 2 tsp. basil pesto
  • 8 - 10 fresh baby spinach leaves
  • 1 Tbl. roasted red pepper strips, chopped

Instructions

  1. In small saucepan, add sauce ingredients. Heat over medium-low heat, stirring, until simmering, and baby spinach leaves have softened to your liking.
  2. Bake frozen breaded chicken breast filets according to packaged directions, topping with cheese during last 5 - 10 minutes. (*I used Aldi's Kirkwood chicken and Sargento's cheese. )
  3. On same foil-lined baking sheet as chicken, bake onion rings according to directions. Adding and adjusting time to coordinate with cjicken being done., *Or bake ahead and add back to sheet to reheat when you add the cheese on top of the chicken to rewarm. This is easy, don't fret!
  4. While chicken is baking, sauté muchrooms in butter in small pan until lightly browned on each side, remove mushrooms to a dish and cover, set aside.
  5. In same small frying pan as mushrooms were cooked in, place buttered and seasoned brioche bun buttered-side down. Heat over medium-high heat until toasted, remove, place onto plate. Top bottom with fresh baby spinch leaves.
  6. When chicken and onion rings are done, remove from oven and place chicken with melted cheese on top of prepared bottom bun. Top with mushrooms, onion rings, and warm sauce. Place on top bun, grab a few napkins, and enjoy!
