Behold! Your new go-to party, weeknight, everything-anytime sandwich just in time for the Super Bowl! Classic Chicken Parmesan turned into a killer-good sandwich!
Kicked up with roasted red peppers and fresh baby spinach leaves, this sandwich (sub, hoagie?) is magically made super-easy using a few surprise convenience items! The one thing that’s NOT too good to be true! You’re really going to LOVE this!
OH. And almost NO dishes. Now, what’s not to die for over that, right?

I’m so very sorry that it’s been so long, but it couldn’t be helped.
About mid-summer last year, my health took a very scary dive. I wish I could say it was kinda cool to finally get to see the inside of an ambulance, but it wasn’t. I won’t go into everything, but by the end of summer I was in BAD shape.
I needed an operation amongst other things, and what was supposed to be just one surgery and a 4-day hospital vay-cay, turned into NINE surgeries and 4 MONTHS. And, oh yeah, I almost died.
So, uhm yeah, it’s NOT been fun.
But I’m home now, way on the mend, and back amongst the living!
So, please forgive me for the long lapse! I’m thinking that this easy-peasy-silly-cheesy recipe will get me back into your good graces. It sure did put smiles on our faces!! Not only is it SUPER simple to make, but it also dirties almost NO dishes. I mean, seriously. It’s a go-to now forever!
It all started when we got a brand new Aldi grocery store built in our town and an article that I judt happened to read within weeks after. Talk about your coincidental timing!
The lady who wrote the article talked about her favorite Aldi products after working there for many years, and one of them that she mentioned was breaded chicken breast filets. She really seemed to loved them, and with me still on the mend and needing any and all help I can get, decided to give them a try.
WOW was I thankful that I did!! They were every bit as good as she said they were! Okay, I mean, not like perfectly made homemade fried chicken mind ya! But close enough that they worked BEAUTIFULLY for this!
PERFECT for when throwing together a simple sandwich, or any other easy main dish or appetizer!
Seriously. I’m gushing. I really need help.
Anyway, I have been on a sandwich kick, as not too much food, and the easier the better for me right now. And I had a serious craving for Chicken Parmesan!
So, instead of going the whole meat, pasta, garlic bread, and salad route, I decided to just put it all together into one drop dead gorgeous sandwich!
I dolled it up with a few other unexpected items adding roasted red peppers and fresh baby spinach leaves.
THIS. Was going to be DIVINE.
And I wasn’t disappointed over those chicken filets, either. Above is what they look like straight out of the bag.
Not too bad, eh? Not bad at all!!
And below is what they looked like after the first baking, (side one). Totally thrilled. Could not have looked, tasted, and worked out better!
I then simply topped them with shredded mozzarella and provolone blend cheese by Sargento, and grated some fresh parmesan cheese over them.
DO NOT skimp on the cheese because you want that overspill down onto the cookie sheet to create that delicately crispy, lightly browned, cheese skirt! One of the best parts!
I buttered the insides of the rolls, let that melt, then slathered them with one of my FAVORITE pasta sauces!
It thickened up wonderfully during the last 5 minutes of baking time. So don’t fret if you’re thinking that it may be too thin. It all works out in the end!
Just drool over all that ooey-gooey melty cheese! Go ahead! I won’t tell!
I piled on the fresh spinach leaves, and placed that heavenly chicken right on top of the battery, warm roll with rich pasta sauce.
Lastly, I added a few strips of roasted red bell pepper on top. And lemme tell ya. “DIVINE” ain’t even the word!

It all came together so beautifully, that you’d honestly think that you picked these sandwiches up at a local downtown hotspot! NOT. Kidding.
So I am dedicating this sandwich to that wonderfully helpful lady that works for Aldi. I cannot tell you, or her, how thankful I am to find a great product that helped me out when I needed it the most!

Super Easy Chicken Parmesan Subs
A super easy kicked-up classic perfect for just about any time!
Ingredients
- frozen breaded chicken breast filets
- crusty sub rolls, split and buttered inside
- 1 jar of your favorite marinara or red pasta sauce
- shredded mozzarella and provolone blend cheese
- fresh grated parmesan cheese
- fresh baby spinach leaves
- roasted red pepper strips
Instructions
- Preheat oven to 400º, (or temperature suggested per your product). Line a baking sheet with foil and spray with no-stick butter-flavored spray.
- Place filets onto baking sheet and bake first side for 20 minutes (or according to your product instructions). Turn filets and bake half of the second amount of time, for this 10 more minutes.
- Remove from oven and top filets with shredded and grated cheese as desired. Place split open and buttered rolls onto baking sheet (or second sheet), and bake 5 minutes.
- Remove from oven and spread insides of rolls with pasta or marinara sauce as desired. Bake 5 more minutes until cheese is fully melted. Remove from oven.
- Top bottoms of rolls with fresh baby spinach leaves, remove filets with a spatula and place on top of spinach. Top filets with roasted red pepper strips and place on roll tops. Serve hot and enjoy!
