White Chocolate Peppermint Rice Krispie Balls

A surprisingly HUGE hit on the goodie tray this year, these chewy, minty, delightfully crispy balls covered in white chocolate just might be the one to bribe Santa for that #1 wish on your Christmas list! 

 

 

Back when I was in middle school and high school, we used to make all kinds of rice crispy treats! And these peppermint ones were always  a special treat during the holidays!

Not only are they a pretty (and tasty!) addition to your holiday goodie tray, but they’re also wonderful for Valentine’s Day, too!  

And since they only have a few ingredients, they’re a life-saving, last-minute, quickie to make for a forgotten bake sale obligation, too! 

 

So, to get these started, they begin the same way that all of these classic retro treats do, with a bowl of marshmallows dotted with real butter! (I always use Minerva Dairy Amish Butter because it’s simply the best!!) 

Simply microwave them until totally puffed following the directions on the rice crispy box. 

 

 

 

 

 

Remove them, and stir until melted and creamy, then stir in the rest of the inside ingredients!

 

 

 

 

By this time, they’ll be cool enough to handle, so butter up your hands and roll them into balls placing them onto a wax paper-lined sheet. 

(*I actually got 24 balls…but we ate two of them. Ooopsie.) 

 

 

 

You can actually stop right here, but they’re a little sticky, so it’s best to just go ahead and dip them!

 

 

I dipped mine this time in both white chocolate and milk chocolate almond bark, since I ran out of the white chocolate. And both were equally delicious!

 

 

 

 

So, just follow the directions on almond bark and melt a few squares at a time, dip the peppermint crispy balls into the melted chocolate coating well on all sides….

 

 

 

 

…place them back onto the prepped baking sheet….

 

 

 

 

…and sprinkle the tops with crushed peppermint candies or candy canes!

 

 

Not only are these absolutely DELICIOUS, but they’re just as pretty on the inside as they are on the outside! 

 

 

 

These actually keep well, too. Because the inside is completely sealed by the chocolate, they don’t dry out and stay nice and chewy inside! 

 

 

 

 

And if sending gifts, or taking them a long distance for a party or get together, they also travel extremely well!

So, even though the holidays are over, there’s still plenty of excuses to make these such as tailgating parties and the Super Bowl, Valentine’s Day, birthdays, and bake sales!

White Chocolate Peppermint Rice Krispie Balls

Ingredients

  • 3 Tbl. Minerva Dairy Real Amish Butter, cut up
  • 4 cups mini marshmallows
  • 1 tsp. peppermint extract
  • 1/2 tsp. vanilla extract
  • 1/4 tsp. salt
  • 3 drops liquid red food coloring
  • 3 cups rice krispies cereal
  • 1 more cup mini marshmallows
  • white chocolate almond bark, 4 - 6 squares, melted
  • about 3 more Tbl. soft butter for your hands, as needed
  • crushed peppermint candies or canes

Instructions

In large bowl, add marshmallows, top with cut up butter, and microwave until marshmallows are totally puffed. Remove and stir until creamy. Stir in extracts, salt, and food coloring. Fold in rice krispies and 1 more cup marshmallows.

*Butter hands, and roll mixture into 1 - 1 1/2 inch balls, placing onto wax paper-lined baking sheet. Set aside. (*Keep buttering hands as needed.)

In medium bowl, melt bark according to package directions.

With two forks, coat each ball completely with white chocolate, placing back onto wax paper. Sprinkle tops as you go along with crushed peppermint candy.

Place into fridge to set. Store on counter in airtight container.
