Decadent Chocolate Cherry Amaretto Pie

I happened to remember that it was my sweet neighbor’s birthday, so I whipped up this pie to surprise her! I used to make this pie years ago, after seeing it in a Taste of Home magazine back in ’97, and knowing how much she loves chocolate and Amaretto, I thought it was about time that I made my own version again! And this simple, but delicious, Decadent Chocolate Amaretto Pie was the perfect birthday treat!

The original recipe doesn’t have any Amaretto in it, so you can most certainly leave it out if you’d like. But since this was for a special occasion, I definitely wanted it to taste like, “A party in our mouths!”, as Phyllis, the lucky birthday girl, likes to say! 😀

I went with the original recipe for the crust, but this time the crust was a bit of a pistol to get out of the pie dish. (Has butter changed that much?? 😉 ) So be warned of this. You really have to work it away from the edge and sides, and then the pieces come out “ok”.

I think next time, I’ll just go back to making a graham cracker crust or even a regular baked pastry crust, though. So this part is up to you. It used to do perfectly, and still tastes really good! You just have to be patient removing it from the dish is all.

Chocolate chips are another item and ingredient in this pie that sure has changed a lot over the years. I just about ONLY use Ghirardelli anymore for best results, as well as taste, in just about everything I make now. I used semi-sweet, but you can also use milk chocolate for ultra rich and sweet!

Canned pie filling is another convenience item that I really enjoy using on occasion! And it really blends nicely, believe it or not, with the rest of the ingredients to make this pie come together quickly and easily without too much fuss! A VERY handy recipe to have! 😉

Lastly, I wanted to finish off the top with a little extra treat! So instead of just using whipped cream or Cool Whip, which you can most certainly do if you’d like, I made up a simple almond buttercream! A wonderful match with the chocolate almond filling by the way! And decorated the top with maraschino cherries!

Decadent Chocolate Cherry Amaretto Pie
Yield: 8 servings

Decadent Chocolate Cherry Amaretto Pie

Ingredients

For Crust:

  • 1 cup all-purpose flour
  • 2 Tbl. sugar
  • 1/2 tsp. salt
  • 1/2 cup (1 stick) cold butter, cubed into small pieces

For Filling:

  • 1 (14 oz.) can sweetened condensed milk
  • 1 cup (6 oz.) semi-sweet or milk chocolate chips
  • 1/2 tsp. salt
  • 1 (21 oz.) can cherry pie filling
  • 1 tsp. Amaretto Liqueur
  • 1/4 tsp. almond extract
  • almond buttercream frosting, optional garnish
  • maraschino cherries, optional garnish

Almond Buttercream:

  • 2 Tbl. butter, softened
  • 1 cup powdered sugar
  • 1 Tbl. milk
  • 1/4 tsp. almond extract

Instructions

  • For Crust:
  • Preheat oven to 350ºF.
  • In a medium bowl, whisk flour, sugar and salt to mix. Cut in butter until mixture resembles coarse crumbs. Press firmly onto the bottom and up sides of a 9" pie plate. Bake at 350° for 15-20 minutes or until light golden brown. Cool completely.
  • For Filling:
  • In a medium saucepan, combine sweetened condensed milk, chocolate chips and salt. Cook and stir over low heat until chocolate melts. Stir in pie filling, liqueur and extract. Pour into cooled crust. Chill 2-3 hours or overnight until firm.
  • Garnish with Almond Buttercream (or whipped cream), and maraschino cherries if desired.
  • For Almond Buttercream:
  • In medium bowl, beat butter, beat in rest of ingredients. Place into a pastry bag with decorator's tip of choice. Makes enough to lightly decorate top.

    This sounds wonderful...I love choc and Cherry.. Do you think that making it as a tart, it would come out easier? If I ever find someone to share with...I will make this for a friend and me..Thanks for the recipe..your pie looks beautiful!

    Hi, Debra! I'm really not sure, hon. I wouldn't want to mislead you and have it lead to a disaster. If wanting to do a tart, I would most definitely make a pastry that's designed for tart pans. And thank you!! I'm not very good at decorating, but I try, and sure do have fun! :D
