Barbecued Potato Chip Chicken Tenders

 

 

I don’t normally post 3-ingredient quickies. But in my defense, I was EXHAUSTED from the heat. 90º+ days so thick with humidity, you felt like you could literally wring out the air if you tried. It sucks the energy right out of me. I had planned on grilling, but I just wasn’t up to it. So, I was standing there, looking at at a 3 lb. package of thawed chicken boobies, sweating so badly that I probably looked like I had just stepped out of the shower, feeling miserable and thinking, where’s my magic wand when I need one?? After sticking my head in the fridge, (a few times 😉 ), and popping into the pantry, I spied a bottle of barbecue sauce and a bag of barbecued potatoes chips. ~ Forehead slap! ~ And this VERY tasty recipe for Barbecued Potato Chip Chicken Tenders was born out of pure necessity! Done.

I never know what my hubby is going to like and dislike, so I decided to just do half of the package this way, using two of the chicken breasts, and save the other two for the next day. I simply sliced up the breast meat into about 18 – 20 strips, and tossed them with Sweet Baby Ray’s barbecue sauce because it’s spicy, lightly sweet, and thick enough the hold the breading on.

I let them marinate in the bbq sauce all morning, then I crushed the potato chips in a baggie with a rolling pin until they were fine crumbs. I preheated the oven while I dipped the strips into the crumbs, pressing them on nicely, and placed them onto a parchment paper-lined baking sheet.

I tossed them into the nice hot oven and baked them for less than 15 minutes and they were perfectly done, and still nice and tender-juicy inside!

We enjoyed these babies with extra barbecue sauce for dipping and a simple basic salad with homemade Ranch Dressing for a light lunch and supper, but these would also make for fun appetizers, too! You can slice them into strips, or, you can cut them into 1 1/2″ chunks for “bites”, and the baking time is the exact same do to the chunks being thicker. Silly-easy!

My hubby and I both were shocked at how good they were, and I was so happy to not have to mess with much in the nasty heat!

So when you’re facing a heatwave, and the humidity is a steamy 85%+, you’ll thank me for this handy-dandy little 3-ingredient recipe! 😉 It really made my life easier! Be sure to keep coming by to see what I did with the other half of the package the next day!! 😉 Just as easy – – just as fun!

Barbecued Potato Chip Chicken Tenders
Yield: 4 - 6 servings

Barbecued Potato Chip Chicken Tenders

Ingredients

  • 1 1/2 lbs. boneless skinless chicken breasts cut into fairly thin strips, (1/3 -1/2" thick)
  • 1/3 cup thick barbecue sauce such as Sweet Baby Ray's, plus more for dipping
  • 2 cups crushed barbecue flavor potato chips, (measure after crushing)

Instructions

  • Slice chicken into 1/3 -1/2" thin strips slicing right through the chicken lengthwise, approx. 18 - 20 strips, adding to a bowl. (*If you prefer, you can also cut chicken into 1 1/2" chunks. Baking time will be the same).
  • Pour barbecue sauce over strips and toss to coat.
  • In shallow dish or pie pan, add finely crushed potato chips.
  • Dip pieces of chicken into potato chips crumbs, pressing on, and place onto parchment paper-lined baking sheet.
  • Bake at 400ºF for 12-14 minutes or until no longer pink inside. (*Always check one that's in the center of the baking sheet). *Time depends on your oven and how thick or thin you sliced your chicken.
  • Remove using a spatula to a party platter.
  • Serve with extra bbq sauce for dipping!
