Hot summer days sure can wear me out. The heat and humidity just takes it right out of ya, doesn’t it?! And though I love a nice cup of coffee, one of the last things I desire is something hot to drink when the heat hits you like a warm, wet blanket. Ugh. So, a nice early afternoon treat, something a little sweet with a little kick, and enough caffeine to get me through the rest of the day, is my summertime go-to favorite! A rich, cool and creamy, icy cold coffee with a few liqueurs splashed in! And this Caramel Iced Coffee with Kahlua and Frangelico beats any fancy schmancy, overpriced coffeehouse concoction hands down!! 😉
You can actually make this two different ways, too! You can sip it, chilled, over ice as shown above. Or, you can add the cold ingredients into a blender with a handful of ice, (and maybe a little ice cream 😉 ), and blend it up into a slushy frappé!
I skip the whipped cream, but if you’re planning on serving this to company, you can dress it up any way you like such as topped with whipped cream, drizzled with more caramel, and even a cherry on top if you’d like a “wow” presentation! I didn’t happen to have any left on hand at that time, but instead of pouring this over ice or using ice cubes in the blender, you can also freeze coffee into ice cube trays and serve over those or blend them up, too, for something more fun! (Just make sure to sweeten the coffee before you freeze it into cubes if you don’t prefer unsweetened coffee).
I designed this recipe for just one serving, but this can easily be multiplied for a small group and made in a pitcher. Just pop it into the fridge to keep cold. If making frappés, just pour in enough from the pre made pitcher for 2 -3 drinks at a time into the blender over the ice (or coffee cubes), and blend servings as they are needed. Easy-peasy. 😉
