Be honest….do you crave salad for the salad?

Or are you like me, an admitted salad dressing junkie? 😉

 

I admit it! 😀 Sometimes I’m craving a nice, big, fresh salad just for the creamy dressing! 😀

But, of course, when you make the dressings homemade, they really truly ARE hard to resist!! I use a gawd awful ridiculous amount on mine, and that’s the way I like it, dammit. 😉 Not  a drop goes to waste, wouldn’t dream of it, and I enjoy every last swipe from the bottom of my plate, too. 😉

And before you judge, (BTW, please don’t), and think that my salad dressings are unhealthy because of the mayo, and other “no-no’s” like sour cream….let me just say that we always lose weight, drop it like sacks of potatoes, when we go on our salad binges! Not only that, but we always feel our best when we do this, too! If it didn’t get completely monotonous, we’d probably just dine on homemade salads and dressings forever! But that would get old, and it does get old after awhile. So after indulging in other culinary adventures, we do take the time to come back to salads in between! 😉

But here’s why they seem to work so well for us, no matter how much dressing I ladle over the top!

My salads are chockfull of veggies like lettuce, tomatoes, cucumbers, peppers, chopped broccoli and cauliflower, shredded carrots, fresh mushrooms, and red onion.

I also like to add LEAN cuts of thinly sliced meats such as roasted beef and turkey for protein. Some days, this is the only meal that we have, so it needs to be substantial.

Our favorite cheeses also add to the healthiness, (yes, cheeses are healthy and LOADED with vitamins, minerals and proteins!), and we very much enjoy the flavors of sharp cheddar and usually havarti for a little creaminess.

My hubby also likes to top off his salads with a plain, chopped, hard-boiled egg.

And when this is all you’re eating for the day, or very close to it, it really is healthy, hits the spot, and sticks to your ribs!!

Crisp, cool lettuce, fresh veggies, lean meats, creamy cheeses and silky, tangy dressing!

Ya just can’t beat it!!

What’s not to love?? Right?! 😀 I even VERY much enjoy salads for breakfast! And as a matter of fact, though it might sound weird, it’s actually my favorite breakfast! It’s light yet filling, doesn’t weigh me down, goes down easy, and is such a cool and refreshing way to start the day! Especially in the summer!

So get your salad game on and start preparing for bikini weather now! These salads really will take the pounds off, yet you feel like you’re splurging on a royal TREAT! You will also be loading your body with important vitamins, minerals and proteins, and not skipping anything you need to stay healthy, active, and full of energy!

Chunky Whole Grain Honey Mustard & Blue Cheese Salad Dressing
Yield: 2 1/2 cups (20 oz.)

Chunky Whole Grain Honey Mustard & Blue Cheese Salad Dressing

Ingredients

  • 1 cup heavy mayo such as Hellmann's
  • 1 cup thick sour cream such as Daisy
  • 3 Tbl. whole grain mustard, I use Maille Old Style
  • 1 tsp. apple cider vinegar (or to taste), can sub fresh squeezed lemon juice
  • 1/4 tsp. sriracha sauce
  • 1/4 tsp. regular salt
  • 1/8 tsp. coarse ground black pepper
  • 1/8 tsp. garlic powder
  • 1 Tbl. real honey, I used Sue Bee's Sage Honey
  • 4 oz. crumbled blue cheese, (1 cup)

Instructions

  • In medium bowl, stir together all ingredients, (*except honey and blue cheese), very well until completely mixed.
  • While stirring, drizzle in honey. Stir until mixed in.
  • Stir in blue cheese. (Mix in well, but leave nice chunks). Don't over stir.
  • Spoon into a glass jar or container, cover with lid, and chill for several hours.
  • Serve over salads, or use as a condiment on sandwiches, or as a dip for appetizers.

    Hi ya, Andi!!! :D (Waving madly!! :D ) OH! I so hope you like it!! I have about 15 homemade salad dressings on here now, and hope to have twice that by the end of this summer! (I even have a new one coming next week! ;) ) With all of the wonderful vegetables you grow on your farm, I hope that you find a few favorites!! I just hope that they do your beautiful vegetables justice!!

    Hey there Kelly! Made this dressing for the FF&F What's on the Menu? Tag Game. When I moved to Iceland 13 yrs ago, I was surprised to see that Icelanders rarely "dressed" a salad. They ate them plain & boring, but I couldn't live w/that. I like salads, but I needed flavors other than veggie. My Siggi only eats blue cheese salad dressing, so variations are a goal for me & we both loved this one. I did use low-fat sour cream & Tabasco vs sriracha sauce. This is great stuff, Kelly -- Great on a simple side-salad or an expanded multi-ingredient meal-in-a-bowl type salad. Thx for sharing this recipe w/us. :-)
