When winter is finally over, and spring and summer take over, my days seem endlessly long. I’m a light sleeper to begin with, and as soon as the sun starts to come up, lately about 5:15 am, I wake up.
Once I’m awake – – that’s it. I’m up whether I want to be or not. Or whether I’m dead tired from a bad night’s sleep. Doesn’t matter.
So up I am tiptoeing through the house feeding the cats and trying not to wake the hubs. (Why do the floors only creak, LOUDLY to boot, when you’re the only one up? And why is it that when you’re trying to be quiet as a mouse, that everything you do and touch, makes a terrible racket no matter how much you try to be careful?) It never fails.
But I LOVE peaceful, quiet mornings all to myself. When my little world is just waking up, the birds are just starting to sing, every tiny sound is crystal clear, and the moment is as if it was all for me. Created and waiting just for me to dream and plan the adventures of the day.
But by noon, I’m about exhausted when I’ve tried to get everything done in one morning. Which actually, is about every day. So, a little coffee with some added liqueurs is a royal treat for me! 😉 It’s like I’m being rewarded for what I’ve done, and gives me a caffeine boost to get the rest of my list accomplished at the same time. Works for me!
Though I love some of the coffees that you can pay an arm, a leg and a kidney for, I make them just as good at home, and this special treat has not one, but four, added “bonuses”! A dreamy mix of Kahlua, Baileys Irish Cream, Godiva White Chocolate Liqueur and Creme de Menthe! Come to mama!
Spring days are so hard to judge! One day it’s 90, hot and humid, then the next day you begrudgingly have to turn the heat on! So this coffee drink can either be made to enjoy hot, or chilled over ice for a cool minty iced coffee treat! You can even turn this into a dessert by serving in a tall glass over a scoop of fresh vanilla or coffee ice cream instead of ice!
So no matter what the weather is, this royal treat will spoil you while you get the last of that stubborn spring cleaning done! 😉 Simply add as much or little of the Creme de Menthe to suit your own taste, and just relax and enjoy! CREAMY WHITE CHOCOLATE MINT COFFEE with FOUR LIQUEURS
Serves 1 (*Can also be chilled and served over ice)
1 brewed “americano”, (4 oz. brewed coffee)
1/2 oz. Baileys Irish Cream
1/2 oz. Kahlua Liqueur
1/2 oz. Godiva White Chocolate Liqueur
1/2 – 3/4 oz. Creme de Menthe, to taste
1 tsp. sugar, optional
whipped cream, optional
Brew one cup of coffee and pour into a measuring pitcher. *If wanting a sweet coffee, add sugar now and stir to dissolve. Stir in rest of ingredients, pour into a serving glass or cup and top with whipped cream if desired.
For Iced Coffee: Brew cup of coffee and stir in sugar to dissolve if adding. Chill. Stir in rest of ingredients, pour into glass of ice, and top with whipped cream if desired. *Can also be served over a scoop of vanilla or coffee ice cream.
