Two words. Kitchen. Remodel.
Tears, worry, frustration, elation, smashed thumbs, sawdust, sore backs, anticipation. And yes, one spat after another over the little things. I cannot tell you how happy I’ll be when it’s all done!
And the last wallet-buster was finally purchased and delivered yesterday! A new Viking French Door, freezer on the bottom, with ice and water fridge! YAY! My hubby is finishing up installing and hooking everything as I type.
Of course the cab above was too big, so that had to come down and he made me a new one. A cute little open shelf wine cab, since those upper cabs are about useless anyways.
But the old fridge is in the middle of my smallish kitchen blocking the cooktop, so doing anything in there wasn’t going to be possible! So my hubby had a dagwood and I had one of my favorites! Petite smoked oysters on fontina, muenster, and sharp cheddar cheese topped onto good, old reliable Ritz crackers!
And my best homemade cocktail sauce that actually starts with ketchup! I know, right? No one has EVER guessed that it starts with that it’s so good! Tastes better and costs pennies compared to store-bought!
I know oysters are a love/hate thing. Either you crave ’em or wave ’em, but even if you aren’t an oyster lover, you’ll still LOVE the cocktail sauce for something you do enjoy!
So I hope no one is offended by the poor, lonely, ugly, li’l buggers. They sure aren’t the prettiest things to look at!
But they’re so darned good! And this easy snack, appetizer or light meal literally takes less than 10 minutes to make!
It was perfect after another long day of the never-ending, but getting closer!, kitchen remodel. I have to get crack-a-lackin’ now, though.
Another day, and lots to do! Everything has to be moved over to the new one, and the old fridge is going out to it’s new home in the garage! And you bet the first thing I’m putting in it will be a couple of beers! I have a feeling I’m a-gonna need one. 😉

PETITE SMOKED OYSTERS & ASSORTED CHEESE CRACKERS with HOMEMADE COCKTAIL SAUCE
1 (3.75 oz.) tin of fancy smoked oysters, any size oyster is fine, drained on paper towel
assorted fresh cheese slices such as swiss, gouda, fontina, sharp cheddar, muenster, monterey jack, co-jack, havarti, fresh mozzarella or any cheese your heart desires!
assorted crackers, Ritz work perfectly
fresh lemon wedges, optional
1/2 cup Heinz Chili Sauce or regular ketchup
2 Tbl. prepared horseradish, the hotter the better!
1/2 Tbl. lemon juice, fresh or concentrate
1/4 tsp. worcestershire
1/8 tsp. salt
1 pinch coarse ground black pepper
1/4 tsp. dried minced onion
In small bowl, mix cocktail sauce ingredients well. Chill in fridge.
Remove oysters carefully with a fork underneath to paper towels to drain.
Slice assorted cheeses into thick squares and place all onto assorted crackers. Serve with cocktail sauce for dipping and squeeze fresh lemon juice over oysters if desired.
