Best Triple-Cheese Skirt BBQ Bacon Burger with Special Sauce

Who doesn’t love a skirt…made out of cheese? Right?!? And this burger wears it well!! Actually, all of the flavors of this burger came together so beautifully, that it’s honestly the best tasting burger that I’ve ever had! Truly, a MUST-MAKE!!

The RiverHouse Dressing company, as well as Tillamook, graciously sent me some of the best salad dressings and cheeses I’ve ever tasted! (You can see my other recipe {here} for a to-die-for steak sandwich!)

And I have had so much fun playing with their products! 

 

 

 

 

Their dressings are outstanding, and anyone who’s never had Tillamook cheese…well…let’s just say that you’ve been missing out! 

Rich, creamy, and extremely well hand-crafted! A very top-notch, award-winning cheese company!

 

 

 

 

 

For this recipe, I incorporated three cheeses into the “cheese skirt”. The Tillamook Extra Sharp Cheddar and their Smoked Extra Sharp White Cheddar.

And for the third flavor, I added some Boar’s Head Horseradish cheese for a bit of heat and kick! 

 

 

 

 

 

And all I can say is….WOW!!! What a winning combination!! 

 

 

 

 

So, to make this crazy-delicious burger, you simply grill or panfry a burger cooked to your liking, then slather it with your favorite barbecue sauce. I used my personal go-to fave, Sweet Baby Ray’s Original!

While your burger is cooking, be sure to prep any ingredients that you want on it. And don’t forget the special sauce! 

Then just make the cheese skirt and start assembling!

 

 

 

 

First is, of course, a toasted bottom bun. 

 

 

 

 

Then the lettuce and the bbqed burger.

 

 

 

 

Making a cheese skirt is so easy, you’ll wonder why never tried doing this before! They’re delicately crispy, just like the cheese that spills over onto the foil when baking, that you peel off and fight over!

Only…a whole huge disk of it!

I know!!!! Omg…!!!

Just melt a little bit of butter onto a flat griddle pan, add a large handful of shredded cheese, spread it out into a thin layer, add a little water around the cheese, cover it with a dome lid, and melt!

Remove it with a spatula when the bottom is lightly browned and the cheeses have fully melted and look “lacy”! 

 

 

 

 

That’s all there is to it! And BOY is it ever good!! I love snapping off the edges and enjoying them all by themselves! 

 

 

 

 

I then added two crisp-cooked and peppered bacon slices and very thinly sliced onion. 

 

 

 

 

And lastly, I slathered the top toasted bun with my special sauce!!

 

 

 

 

Now, THAT. Is a BURGER!!

 

 

 

 

And what a burger it WAS. All the flavors played so well together, it was like a party in your mouth! 

 

 

 

 

And it’s just as fun to eat as it tastes, too!! That cheese skirt is just too cool!

Best Triple-Cheese Skirt BBQ Bacon Burger with Special Sauce
Yield: 1 burger

Best Triple-Cheese Skirt BBQ Bacon Burger with Special Sauce

Ingredients

For Special Sauce:

  • 2 Tbl. heavy mayo
  • 1 Tbl. whole grain mustard
  • 1 Tbl. jarred extra-hot horseradish, to taste for a little heat

For Burger: 

  • 1 grilled 1/4 - 1/2 lb. burger seasoned with salt and pepper and slathered with barbecue sauce (*I used Sweet Baby Ray's Original)

For Cheese Skirt:

  • 1/2 Tbl. real butter such as Minerva Dairy Butter, melted
  • 1/2 cup shredded Tillamook Morning Star Extra Sharp Cheddar
  • 1/2 cup shredded Tillamook Trask Mountain Smoked Extra Sharp White Cheddar
  • 1/2 cup shredded Boar's Head Horseradish Cheese

Rest of Ingredients:

  • crisp iceberg lettuce leaves
  • 2 crisp-cooked peppered bacon strips
  • thin slices of onion
  • 1 kaiser roll or brioche bun, split open, buttered and toasted

Instructions

    In a small bowl, stir together special sauce ingredients. (Adjust amounts to your own personal taste.) Cover and set aside, or chill if not using right away. 


    Into a medium bowl, grate cheeses, and toss them together to mix evenly. Prep any other ingredients you would like on your burger to have them ready. 


    Form ground beef (1/4 lb. - 1/2 lb.) into a patty, season both sides with salt and pepper to taste, and grill or fry to desired doneness. When almost done, slather with your favorite barbecue sauce. (*I used Sweet Baby Ray's Original BBQ Sauce.) Cover and set aside to keep warm.


    On a flat, non-stick griddle pan, melt butter. Place cheese onto pan over medium-low heat, spreading out into a large circle, but not too thin. Add a little water around the cheese and place a dome lid over to cover. When cheese is lightly browned on the bottom and fully melted, remove from heat. *This only takes a few minutes, so keep checking so that it doesn't burn. 


    Place lettuce and burger onto a toasted bun bottom. Carefully life cheese skirt from the griddle pan and place on top. Top with bacon slices, onion, and lots of special sauce. Place on top bun and dig in! Enjoy!
