Bacon Wrapped Chicken Sandwiches with Sweet ‘n Tangy Balsamic Barbecue Sauce

Some of the best indoor barbecue you’ll ever taste! This unique sauce is sweet & tangy with a richly-wonderful reduced balsamic sauce that’s to DIE for! The tender & juicy chicken is wrapped in bacon and bathed in the sauce, then topped with cheese, along with avocado, lettuce, tomato and red onion! Perfect for Memorial Day!!

 

 

How such a simple barbecued chicken sandwich could have so much spectacular flavor? Well, just you wait and see!!

And it’s so easy to make, that you can easily whip it up for a whole crowd for Memorial Day weekend! Because. You know what always happens on Memorial Day. It RAINS. 

So, if the weather isn’t going to be ideal, here’s a fantastic solution!! Just bring the “Q” inside, and make the best of it! 

So. Just start by seasoning the chicken and wrapping it in bacon. We like the thick cut, but you can use whatever you like. (Regular-cut bacon will get extra-crispy, though. Fair warning.) 

 

 

 

 

Then lightly baste the top and sides with a little of that awesome sauce!

 

 

 

 

Bake it in the oven, remove it, and then add a LOT of sauce! Seriously. Don’t hold back!!

 

 

 

 

You really want to totally slather the whole tops and sides with this amazing sauce! 

 

 

 

 

Then pop them back into the oven and bake them some more. 

 

 

Lastly, top them with some good ol’ American cheese slices. We prefer the plain white kind, but you can use yellow if you like. (*The only difference is that, the white kind doesn’t have any added food colorings to make it yellow in color.) 

 

 

 

Next, get your buns in order! Any kind will do for this.

 

 

 

 

Leave the bottom bun be, but start by smearing the top buns with real mayonnaise. 

 

 

 

Then add some lettuce, tomato, ……

 

 

 

 

…fresh avocado slices and thinly sliced red onion.

 

 

 

 

Now. This is how we dressed ours, and the combo could not have been better!!! I don’t even care for avocado, but it really worked well with everything else going on! And I LOVED it! 

 

 

 

 

But, you can of course, dress up your sandwich with whatever condiments you prefer. Or even none at all, as that chicken was THAT. GOOD!! 

 

 

 

 

But you could pile some onion rings and jalapeños on top if that’s more of what you’re craving. Coleslaw would also be a fun topping! 

 

 

 

 

Always, always, always, just make things according to how YOU like them. 

 

 

I didn’t even toast up the buns this time, and it was actually pretty wonderful like that! But yes, you can certainly butter them and run them under the broiler if you want to. Just watch so that they don’t burn! 

 

 

 

My hubby and I both absolutely LOVED these sandwiches!! But we were pretty sad that I had only made two!! We were BUMMED the next day not having any leftovers! Lesson learned!

Bacon Wrapped Chicken Sandwiches with Sweet 'n Tangy Balsamic Barbecue Sauce

Ingredients

For the BBQ sauce:

  • 1/2 cup balsamic vinegar
  • 1/3 cup ketchup
  • 3 Tbl. brown sugar
  • 1 garlic clove, minced
  • 1/2 Tbl. Worcestershire sauce
  • 1/2 Tbl. spicy brown mustard
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground black pepper

For the Chicken:

  • 4 chicken breasts
  • 4 - 8 slices bacon, as desired
  • salt & pepper to taste
  • 4 slices yellow or white American cheese

Rest of Ingredients:

  • 4 brioche buns
  • mayo
  • lettuce leaves
  • slices of tomato
  • slices of avocado
  • thinly sliced red onion

Instructions

For the BBQ Sauce:

Combine all the ingredients in a small saucepan and stir until all the ingredients are incorporated and the mixture is smooth. Simmer over medium heat until reduced by 1/3, about 15 - 20 minutes.

For Chicken:

To Grill:

Preheat a gas or charcoal grill. Season the breasts with salt and pepper. Wrap with as much bacon as desired. Lightly coat with some of the BBQ sauce using a pastry brush. Place on the grill. Place the remaining BBQ sauce, still in the small saucepan, on the edge of a gas or charcoal grill and allow to gently simmer while the meat cooks.

Cook the chicken about 8 minutes per side, continually brushing the meat with BBQ sauce every few minutes. Add cheese and let melt. Remove the meat from the grill and let rest for at least 5 minutes.

Grill inside of buns. Spread with a little mayo if desired, and place lettuce, tomato, avocado, and red onion onto the top buns. Place cooked chicken onto bottom buns.

Serve with the heated BBQ sauce alongside.

To Bake:

Preheat the oven to 375º F. Place the bacon-wrapped seasoned chicken breasts onto a rack placed over a foil-lined baking sheet, lightly brush with BBQ sauce, and bake for 20 minutes. Remove the from the oven and spoon lots of the BBQ sauce all over the top of the chicken breasts. Return to the oven and bake for another 8 minutes. Top with cheese and bake 2 more minutes until melted.
