Chocolate Mint Affogato / #Choctoberfest 2017

OH. MYgawd. Yeah. This is one of THOSE kinds of desserts! I mean, just LOOK at that!! Don’t you want to just take that spoon, dig straight down, and indulge in a bite? And guess what?! It takes MINUTES to make, it actually has health benefits, and there’s no baking or fussing! Talk about a decadent dessert dream in a snap!!  Come check it out!!!




So, Hello there!! And so happy you made it to the party! If you’re new to my blog, we’re well into an incredibly exciting week of #Choctoberfest in which over 200 chocolate recipes are being created and shared for you by 70+ bloggers from all around the world! This absolutely amazing event is organized and put on by Allison of The PinterTest Kitchen, and takes place each October! And I am so honored to be a part of it!


The recipe I’m sharing today, a Mint Chocolate Affogato, is a fantastic dessert that doesn’t require any baking! So you can enjoy this any time you’d like, it’s fast and easy to whip up in literally minutes, and it’s also nice to have the ingredients on hand for unexpected company, too!

For this one, I’m using Barlean’s Chocolate Silk Greens powder and their Essential Women Omega-Swirl Chocolate Mint syrup! Barlean’s has a complete line of health products that actually taste delicious!!


*Note: Barlean’s also sent us all some awesome coconut oil
that I will also be using in a recipe at a later date! 



Their Chocolate Silk Greens powder actually tastes like chocolate, not that awful taste like most vitamins and supplements, and there is a wonderful fruity undertaste that’s amazing! It’s loaded with antioxidants, fruits, and vegetables, with no added sugars!

And their Chocolate Mint Swirl is equally delicious! Most people get their Omega-3s from fish capsules or flax oil, but Barlean’s came up with a tastier option. They emulsified the flax oil to give it a smoothie like texture and used all natural ingredients to give it a chocolate mint flavor. You can use it in smoothies, yogurt, and even oatmeal!

You can also add these to milk, hot chocolate, and even enjoy over ice cream!

So, the suggestion of serving these super cool, healthy and natural products over ice cream got me thinking! And gave me the idea to take a classic dessert like “affogato”, and kick it up a notch! A not-really-so-healthy dessert, that now has extra health benefits, and makes you feel a little less guilty!

What’s not to love about that, right?

And this turned out absolutely heavenly!! I used coffee ice cream per the hubby’s request, but you could certainly start with chocolate mint or even a nice vanilla bean. (Gelato and frozen yogurt also work well!)





Then I simply made shots of espresso, stirred in a small amount of Bailey’s, along with both Barlean’s products, and just a little bit of sugar since we prefer ours a little bit sweet. But sweetening this is completely up to you. (You can also use heavy cream or half & half instead of liqueur if preferred.)

And if you don’t have a machine to make espresso, no worries there, either! You can simply make a few shots from instant espresso powder, or just use the last of the morning’s pot of coffee that got a little too strong!

The hot espresso gets poured right over the scoops of ice cream, and then I drizzled more of the chocolate mint syrup over all!





Lastly, I finished it off with a nice pile of whipped cream, and dusted the top with more of that delicious chocolate powder!

Let me tell ya, when that ice cream melts a little, and mingles into a creamy river with the flavored espresso….and a bit of that whipped cream and chocolate mint flavored syrup join the party….it’s absolutely divine!

Chocolate Mint Affogato / #Choctoberfest 2017


  • 2 shots (or one double shot) brewed espresso (3 oz. each / 6 oz. total)
  • 1 - 2 tsp. sugar (or to taste / optional if you like it sweet)
  • 1 tsp. Barlean's Chocolate Silk Greens Powder
  • 1 tsp. Barlean's Essential Women Omega-Swirl Chocolate Mint
  • 1 Tbl. Bailey's Irish Cream Liqueur (can sub heavy cream or half & half)
  • 4 - 6 large scoops coffee ice cream, or as many as you like according to the size of glass, (can also make this with chocolate, mint chocolate chip, peppermint, or vanilla bean ice cream, or gelato or frozen yogurt)
  • more Barlean's Chocolate Mint Syrup to drizzle
  • whipped cream
  • dusting of Barlean's Powder


  • Brew 2 shots (or one double-shot) of espresso (6 oz. or 3/4 cup), stir in (optional) sugar until melted. Stir in Barlean's powder and syrup, and Bailey's liqueur until creamy, set aside.
  • Scoop ice cream into glasses, pour espresso mixture over ice cream evenly over each serving, drizzle top of ice cream scoops with more chocolate mint syrup, top each with whipped cream, and dust with more powder.
  • Serve immediately. (*Best slightly melty, though, because it gets creamier as the ice cream slowly melts into the warm espresso!)
