Cowboy Pizza!

Barbecued smoked pulled pork, oven-roasted sweet red cubanelle peppers & onions, all blanketed with melted cheese! Then topped with finely shredded lettuce, grape tomatoes, Jalapeño Cowboy Candy, crumbled bacon, all drizzled with more barbecue sauce….mmmmm, can you almost taste it?

 

I so wish that you could! It was absolutely DELICIOUS. I would also share with you if I could, too! But since that isn’t possible, you can make one yourself! (You might want to make two, though, just saying…)

 

 

This cowboy-style pizza would be fantastic for upcoming football parties, so if you have some of summer’s smoked pulled pork stashed away in the freezer, now you have at least one new way to have fun with it!

You and your guests are really going to love this!! I used my latest smoked pork for this, but you can use either of my recipes, or even try this with my slow cooker pulled pork if that’s more your style and easier!

Speaking of easy, that’s how this whole pizza got it’s start! I wasn’t feeling well, and we had one frozen pizza in the freezer, along with leftover smoked pulled pork and a half of a bag of shredded cheese!

 

 

I was a little hungry, and my hubby was “starving to death”. Soooo, I just started layering and told my aches and fever to go away. I was going to have fun no matter what.

 

 

And boy did I ever!! I started by oven roasting some sweet red cubanelle peppers from my garden, along with some onion!

Which, by the way, conveniently bakes at the same temperature as the pizza!

And yes, I did plan it that way.

I wanted this to be as easy as possible!

 

I used a frozen 5 cheese Tombstone pizza, because they just have decent flavor and don’t skimp on the cheese! These plain cheese pizzas come in handy to doctor up any way you choose!

And the hubs likes them, too, so…win win!

 

 

I added a little over 2 cups and really piled on that delicious smoked pulled and barbecue sauced pork. And though it looks like a ton, way too much, and you’re already thinking to cut back…

…don’t.

It is a mild, tender meat, and the amount was actually perfect. The more strongly flavored pizza meats, such as traditional sausage and pepperoni, would definitely be too much piled on like this.

But this was just right using “the other white meat”, pork.

 

 

Once the pork was added, I topped it with our roasted peppers and onions….

 

 

….then just a little more pizza cheese to lightly cover. *Don’t add too much more, because these pizzas already come with lots of cheese! And it will just end up being gross.

Just lightly cover the top to keep the ingredients from drying out during baking.

 

 

And here it is! Hot out of the oven looking pretty damn good already!

 

 

You could stop here, but the extra toppings are simply a must for me!! And truly made this quite an outstanding pizza!

So, please don’t skip them!

 

 

I don’t follow the directions though, that say to place the pizza directly onto the oven rack. I always put it on a non-stick round pizza pan, so nothing drips and makes a smoking mess in the oven.

Then you can just slide it right off onto a cutting board or pizza paddle to finish topping.

 

I’m one of those people that LOVES lettuce and tomatoes on my pizza (SO GOOD!!), so on they went!

Season with salt and pepper…..

 

 

….then finish up with my homemade Jalapeño Cowboy Candy, crisp-cooked and crumbled bacon, and a nice drizzle of barbecue sauce!

 

 

And….TA-DAAAAAHHHH!!

Dinner is DONE.

And looking mighty sexy!!

 

 

 

I ate that whole piece right there. Yes I sure did. And I was proud of my little self!

My hubby on the other hand…..ate the rest of the pizza leaving just one piece for the next day!

Which was actually a huge relief!! I wasn’t sure if he was going to like it, but he LOVED it!!

I then snuggled up under a blanket and binged watched movie after movie. But that pizza totally made my day a WHOLE lot better!

So if you want an incredibly delicious pizza, without much fuss, you just landed on the right spot!!

Yield: 4 - 6 servings

Cowboy Pizza!

Ingredients

  • 1 frozen pizza (I used a Tombstone 5 Cheese Pizza)
  • 2 - 2 1/4 cups pulled smoked bbqed pork (10 oz.)
  • 1/3 cup bbq sauce (I used Sweet Baby Ray's Sweet 'n Spicy)
  • oven roasted cubanelle (1 medium sweet red one)
  • oven roasted onion (half of a large)
  • pizza cheese to moderately cover, (I used about 1 cup Sargento's shredded Off the Block 5 Cheese Pizzeria blend)
  • 1 cup shredded lettuce
  • 1 cup quartered grape tomatoes
  • garlic salt & pepper to taste
  • my homemade Jalapeño Cowboy Candy (or pickled/candied jalapeños), as many as you can handle
  • crisp-cooked bacon, crumbled (or REAL bacon bits), as desired
  • drizzle of barbecue sauce

Instructions

  • Preheat oven to 400º F.
  • For Peppers and Onions: Julienne peppers into thin strips, thinly slice half of an onion. Place onto sprayed foil-lined baking sheet, spray top well, bake for 25 - 30 minutes. Remove and set aside. Leave oven on.
  • For Smoked Pulled Pork: Tear pork into bite-sized pieces into a medium bowl, stir in barbecue sauce. Do not heat.
  • To Assemble Pizza: Unwrap frozen pizza, (remove from cardboard), and place onto a round pizza baking sheet. Top with barbecued smoked pork, roasted peppers and onions, and shredded cheese. Pop into oven and bake (at 400º) for 14 - 16 minutes. Remove from oven.
  • While pizza is resting, top with shredded lettuce and tomatoes. Sprinkle with a little garlic salt and pepper to taste. Top with Jalapeño Cowboy Candy rings and crumbled bacon. Drizzle with more barbecue sauce.
  • Slice, and serve with an ice cold beer. Enjoy!
