Hello! Thanks for stopping by! Finally, my first recipe for you for #Choctoberfest! We all are a bit behind thanks to Hurricane Matthew who slowed down companies from being able to deliver products to us, but we’re all getting there now! So my first crazy-easy, rich and delicious recipe I’d like to share for this event, my Strawberry White Chocolate Honey Fudge that I created for Nature Nate’s, is truly heavenly! A little TOO good! (I had to give some away, and even make my hubby his own little stash, so that I didn’t eat it all by myself!) It’s quick and easy to make, uses all-natural honey instead of sugar, and is sure to be a huge hit this holiday season! Plus, it uses two very special products that I’m about to tell you about! Nature Nate’s 100% Pure Raw and Unfiltered Honey and Strawberry Honey Syrup!

I was absolutely honored to be chosen to try one of Nature Nate’s products for #Choctoberfest. And not because of my LOVE of honey, (for all those that know how much I love honey thanks to my Grandma!), but because, as we all are hopefully aware, the month of October is also Breast Cancer Awareness Month. Nate’s company and his family not only make a wonderful, wholesome, 100% natural product, but have generously and kindly partnered with the National Breast Cancer Foundation (nbcf.org). I was thrilled and surprised beyond when I received my package from them, as I was expecting just a small bottle of their Strawberry Honey Syrup, (which is the flavor that I chose to try though they also have Blueberry and Raspberry!), but they also sent not one, but TWO bottles of honey, along with some awesome single serving packets of honey that are perfect to take with you when you would like to add it to a nice steaming hot cup of tea when you’re away from home! Plus a nice, soft T-shirt honoring breast cancer awareness! All of these products, and many more, can be found right on their website! So do take the time to check them out! Such a truly caring group of people. Restores your faith in “big business”.

So with the holidays in mind, (where did summer go so fast??), I thought to make something that would be nice and easy enough that the kids could even help with! It has minimal ingredients, and even though I did mine on the stovetop, you could certainly do this in the microwave, too. The honey is some of the best honey I’ve tasted, and the Strawberry Honey Syrup was a fantastic surprise! I thought that it would be super thick and overly sweet, but it isn’t at all. It has a wonderful tartness to it, very natural-tasting, and easily pourable to measure! I can see MANY more uses than what I had pre-planned, and am going to have so much fun creating many more recipes to come from it!

Swirled Strawberry White Chocolate Pecan Honey Fudge / #Choctoberfest
Yield: 64 - 1" pieces

Swirled Strawberry White Chocolate Pecan Honey Fudge / #Choctoberfest

Ingredients

  • 2 (11 - 12 oz.) bags quality white chocolate chips such as Ghirardelli
  • 1 (14 oz.) can sweetened condensed milk
  • 1/3 cup Nature Nate's 100% Pure Raw & Unfiltered Honey
  • 1 tsp. vanilla
  • red food coloring (liquid or paste) to tint pink, optional (*I used 4 drops liquid)
  • 1/4 cup (or as much as you like) chopped nuts such as pecans, walnuts or pistachios
  • 1/4 cup (or as much as you like) dried fruit such as strawberries (or strawberry-infused craisins), snipped into small pieces
  • 3 Tbl. strawberry jam
  • 1 Tbl. Nature Nate's Strawberry Honey Syrup

Instructions

  • Butter an 8x8 dish and set aside. (You can line it with foil first if you'd like, then butter the foil).
  • In large heavy-bottomed saucepan, melt chocolate chips, sweetened condensed milk and honey over medium heat until smooth. Stir constantly, and remove from heat as soon as melted so that it doesn't scorch.
  • When melted, remove from heat, stir in vanilla, and optional food coloring, then stir in nuts and dried fruit. Pour into prepared dish and drizzle with Strawberry Honey Syrup/jam mixture zigzagging back and forth. Swirl top with a knife. Chill until set. (Several hours or overnight is best).
  • Cut into squares and serve.
  • If you line your dish with foil first, just lift the whole thing out at once, carefully peel back sides of foil, place onto a cutting board and cut into pieces placing your knife directly over the whole slice across short ways, place your over palm on top of the knife and press straight down. So easy to cut this way!
  • *Store in an airtight container in the refrigerator. Keep chilled.
  • Notes

    If wanting to make a small, half-batch, pour into a prepared bread pan! Works great! (Also nice to use when wanting to make two different flavors!)


    Half-Batch Amounts:
    1 bag chips
    1/2 cup + 2 Tbl. sweetened condensed milk
    2 Tbl. + 2 tsp. honey
    1/2 tsp. vanilla
    2 drops liquid food coloring
    2 Tbl. chopped dried fruit
    2 Tbl. chopped nuts
    1 1/2 Tbl. jam
    1/2 Tbl. honey syrup
