My tomatoes and peppers just keep coming and coming and coming….soon I’m going to be having nightmares….of dump trucks pulling up to my house….full of tomatoes….dumping truckload after truckload of tomatoes into my front yard….rolling all over the place….billions and billions and billions of tomatoes!!! Heeeeeelp!!!!!

Hahaha!! Actually, not complaining. I’m very proud of my humble little deck garden that could! And I love taking care of all of my plants! And they have taken very good care of us as well.

We’ve gotten to enjoy so many wonderful meals, sandwiches, sauces, and even snacks with all of these gorgeous tomatoes! And we’ll still be enjoying them through at least part of the winter with all of the sauces that I’ve made and frozen.

 

This is the latest creation, and it really turned out terrific!

I simply sliced everything in half and gave them a little seasoning, oiled and foiled a few heads of garlic, and popped it all into the oven to roast!

I cut up the peppers a little, threw everything into a large bowl including the garlic that I squeezed out from their skins, and gave it all a little toss to mix.

I then blended the mixture, in two batches, in my food processor until smooth and rich!

Sauces are ridiculously easy to make, so it’s just so silly not to make some yourself. Even if you don’t have your own garden, you can always pick some up at your local farmer’s market, community garden, or even the grocery store.

You’ll love the rich, fresh flavor, and you control what spices, herbs, and how much other ingredients, such as salt and sugars, go in there!  Plus, there are no preservatives or funky oils and additives, and nothing in there that you can’t pronounce or have to Google. 😉

Cajun Roasted Red Pepper, Sweet Garlic & Onion Tomato Sauce
Yield: approx. 1 quart

Cajun Roasted Red Pepper, Sweet Garlic & Onion Tomato Sauce

Ingredients

  • 3 lbs. roma tomatoes, halved lengthwise
  • 3 large red cubanelle peppers, halved lengthwise
  • half of a large sweet onion, cut into chunks, layers separated
  • 1 tsp. dried oregano
  • 1/2 tsp. garlic salt
  • 1/8 tsp. creole seasoning
  • 1/8 tsp. onion powder
  • 1/8 tsp. pepper
  • 2 large cloves garlic, root ends sliced off (or to taste)
  • 1 tsp. olive oil
  • dash salt

Instructions

  • Line two baking sheets with parchment paper and preheat oven to 375º F.
  • Place prepared tomatoes, peppers and onion onto baking sheets cut side-up. Spray with butter-flavored no-stick spray or drizzle with olive oil lightly.
  • Sprinkle evenly with seasonings.
  • Place garlic cloves into a small square of foil, drizzle with 1 tsp. olive oil, sprinkle with salt, bring up points and edges, and twist closed. Place on baking sheet.
  • Pop both sheets into the oven and bake for 1 hour, removing garlic package when garlic is soft, golden brown, and poking out of the skins. Check after 30 minutes.
  • When all is done, remove baking sheets, cut peppers smaller and place everything into a large bowl squeezing out the garlic, and toss to mix.
  • Process in food processor, in two batches, until smooth.
  • Lade into a 1 quart jar or freezer container leaving a 1" space at top for expansion when freezing.
  • Let cool, place on lid and freeze until needed.
