Best Easy Grilled Salmon Parcels with Fresh Lemon

It has been so stinkin’ hot and humid here, I swear, there were times when I truly thought that I really was melting. And that they would find my remains, out on the deck, a pink polka dot jammy puddle, next to my tomato plants. Just the watering can still standing.

Seriously. It has been absolutely miserable! You open the door and you can literally touch the air. Disgusting.

Needless to say, the A/C went on. I can squeeze a penny ’til Lincoln’s eyeballs pop out, but sometimes, you just have to give in.

So anyways, they had salmon on sale at the grocery store, and my hubby was really craving his favorite. Grilled.

Cringe.

Grilled….outside….in the heat….

But wait! THIS way of doing it is doable. 😉 Even in the blast furnace heat.

You don’t have to stand over the grill. You don’t have to watch it or even check on it.

I just run outside and turn the grill on and run back in.

Get the salmon assembled, throw it on the grill and slam the lid, run back inside again, and wait 25 minutes.

That’s all there is to it! (Except the running back out one more time and grabbing the salmon and turning off the grill, of course.) 😉

So this is a fantastic way to grill in bad weather, or if you’re going to a park, beach or camping!

Public park grills are usually pretty nasty. But since these are in foil, they never touch the grill. And foil packages are always a great way to cook when you’re camping. 😀

It’s just a win win recipe and method all the way around. SUPER silly easy. You simply cook the salmon in foil with lemon, onions and butter, and that’s it.

You can season it with a little salt and pepper, or add a sprig or two of your favorite herbs, but just as written is really all that it needs.

So that’s what we had for supper, and the hubby and I BOTH were very happy “campers”!

Best Easy Grilled Salmon Parcels with Fresh Lemon
Yield: 2 servings

Best Easy Grilled Salmon Parcels with Fresh Lemon

Prep Time: 5 minutes
Cook Time: 25 minutes
Total Time: 30 minutes

Ingredients

  • 1 lb. mild sweet salmon filet
  • 1 lemon, sliced
  • half of a sweet onion, sliced and separated into rings
  • 4 Tbl. butter, cut up
  • salt & pepper if desired, to taste
  • foil

Instructions

  • Tear a large sheet of foil,( or two smaller pieces), and spray centers with a little no-stick butter-flavored oil.
  • Place salmon onto center(s) of foil.
  • Top with lemon slices, onion rings and dot with butter.
  • Season with a little salt and pepper if desired.
  • Pull up both side of foil, matching up, then roll down to meet salmon. Roll up each end creating a little parcel package. (Repeat if doing two.)
  • Heat grill to medium heat, place parcel(s) onto grill, close lid and grill for 25 minutes.
  • Remove packets to a heat-safe surface, open carefully to release steam, remove salmon with a spatula to plate(s), serve hot.
