The “Hillbilly Club” Sandwich

“Don’t get mad or anything, but you should call this a “Hillbilly Club!” Yep. Those were my hubby’s exact words to me when I asked if I should post this after it received such a positive response on Facebook!  I had no idea of what I was going to call it…a “Deli Club”? But it has garlic bologna, and my personal deli meat fave, olive and pimento loaf on it! Not exactly a “high end” deli sandwich, but to us, it’s a classic! 😉

And I reckon I am just a little bit “hillbilly”! I don’t care much for fancy, gaudy things, I run around barefoot all summer long, I love to get my hands dirty in my gardens, and I just prefer things to be simple. That’s truely what makes me happy. (And I probably had an ice cold beer with mine to boot! 😉 )

But I’m sure ol’ “Jed Clampet” would appreciate a sandwich like this, and “Granny” would approve! 😉 I know my hubby’s eyes about popped out cartoon-style when I brought him his! He was expecting just a basic lettuce, tomato and bologna sandwich, but instead, I surprised him with double-decker, old fashioned club sandwich! 

He’s definitely a 2-sandwich kind of guy. One is never enough, and two makes him just plain stuffed to the gills. So this a very happy medium! Plus four slices of bread is too much. It seems just the two of us alone can go through a loaf in a blink of an eye, and that of course just isn’t good. So one less slice is at least a baby step forward, I say! 😉 

Though I prefer swiss cheese on mine, the hubs likes his “hillbilly all the way!” with good ol’ American cheese, spicy brown mustard, and Hellmann’s mayo! I added some nice lean crisp strips of bacon, cool crunchy lettuce, and some tomatoes from my garden! I must say, these sandwiches were dang good! 

Club-style sandwiches are always more fun , aren’t they? 😀 Lightly toasted, cut corner-to-corner, and of course, picked with a frilled toothpick. 😉 It makes you feel like you’re special. 😉 

So next time you go to fix up some vittles for lunch, don’t forget about “the club”, as you just don’t see them around much anymore. They will definitely surprise, and bring lots of smiles no matter what you put on them. 😉 😀

Yield: 1 sandwich

The "Hillbilly Club" Sandwich

Prep Time: 10 minutes
Cook Time: 1 minute
Total Time: 11 minutes

Ingredients

  • 3 slices thicker-cut white bread, toasted
  • mayo
  • spicy brown mustard
  • 4 crisp iceberg lettuce leaves
  • 4 thin slices deli garlic bolongna, folded in half
  • 2 slices american cheese
  • 2 slices lean crisp cooked bacon strips, broken in half
  • 4 thin slices beefsteak tomato, or thinly sliced grape or plum tomatoes (whatever you have on hand)
  • 2 large thin slices deli olive and pimiento loaf
  • 2 frilled toothpicks

Instructions

  • Toast bread slices. Spread top sides of each with mayo, then a little spicy brown mustard.
  • Top bottom slice with 2 lettuce leaves, garlic bologna slices folded in half and overlapped, 1 slice american cheese, 1 strip bacon broken in half and 2 tomato slices.
  • Top with second piece of toast mayo/mustard side-down. Spread top side with more mayo and mustard. Top with 2 more lettuce leaves, olive and pimiento loaf slices folded up and overlapped, second slice of american cheese, 2 more half-slices of bacon, and 2 more slices of tomato. Place last piece of toast spread side-down.
  • Cut in half corner-to-corner, pick with frilled toothpicks to hold together nicely.
  • Enjoy with your favorite chips and a nice dill pickle! 😉

    I will be using turkey lunch meat or bologna and turkey bacon that I’m going to cook in maple syrup and brown sugar. I’m also going to throw some egg on it!

    Lol mine would want fried spam or Bologna in his. I've never had garlic Bologna or pimento and olive loaf but I like all of those things so I would probably like it. My fav hillbilly meat would be ham and cheese loaf lol
