I admit it. I’m a wing junkie and a cheesaholic. I could almost live on those two things alone….if it weren’t for that darn chocolate! 😉 And an ice cold beer to wash it all down!! 😀  

But seriously, I truly love wings! Such a genius idea by that lady in Buffalo, New York! I don’t know that I recall a single recipe idea, at least in the last few decades, that completely took the country, then world, by storm like this one did!! Incredible, really!

Ever since trying them the very first time, I started playing with the whole idea making, pizzas, burgers, soups, salads, meatballs and meatloaves, and family-friendly casseroles! But sometimes, you just want those wings!

I decided to go back to the wings, but really kick them up a notch. With football season upon us, I’m thinking Tailgating and Football Parties! I didn’t want to bread them, fry them, or bake them, either. Grilling is much healthier as the fat drips away! Well, most of it anyways! 😉 But not too bad, really.

So I started by creating a nice, spicy hot seasoning blend that worked really, really well!!

After grilling, I went with a new sauce that’s so good you just won’t even believe it!!! It’s perfect for wings, because it’s almost a cross between hot sauce and barbecue sauce and even has real honey!! It’s Sue Bee’s Louisiana-Style Premium Barbecue Sauce Made with Pure Honey!  * Right?!! Omg, it’s so good!!!! A must, must try!!

The kind folks at Sue Bee sent me some to try, and it will be my new go-to Barbecue Sauce for wings along with so many other recipes!! Seriously good stuff! I added just 2 tablespoons of butter to it to mimic traditional wings, and it worked beautifully!!

My hubby is NOT a hot wing fan, so I was super excited that he actually LOVED these! TOUCHDOWN! 😀

So anyways, I decided to really go for it and decked them out with cheddar, mozzarella, and drizzled them with the last dab of sauce. I placed them on a serving platter, then placed the platter onto the baking sheet and placed them on the cool side of the grill and shut the lid to melt the cheeses!

Once the cheeses were melted, I needed the grand finale!

I didn’t want these to have to be dipped in a gooey messy blue cheese sauce loaded with more calories, so I simply sprinkled them with blue cheese which slightly melted and stuck on to the other melted cheeses and bacon, then finished off the top with some snipped fresh green onions!

Truly a masterpiece!! 😀 And so much easier to eat at a party because, all of the flavors are all on there and you don’t have to mess with any dips! A party in every bite! 

Honestly, these actually were the best wings I’ve ever had. Hot but not scorchingly hot, FULL of wonderful flavors, grilled to be leaner, and just all-around fun to eat! 😀 The perfect Party Wing!! 😀  

You’re REALLY going to LOVE these and your guests are going to be fighting over them! So please make sure you make enough, overturned furniture is not a good look for a living room. 😉

3-Cheese Pull-Apart Buffalo Party Wings with Bacon & Green Onions (No Dip Needed!)
Yield: 4-6

3-Cheese Pull-Apart Buffalo Party Wings with Bacon & Green Onions (No Dip Needed!)

Ingredients

For Seasoning:

  • 1 tsp. creole seasoning, (I use Cajun's Choice Creole Seasoning)
  • 1 tsp. sweet smoked paprika
  • 1/2 tsp. garlic powder
  • 1/2 tsp. white pepper
  • 1/2 tsp. dried oregano
  • 1/2 tsp. dried thyme
  • 1/4 tsp. garlic salt
  • 1/4 tsp. smoked salt
  • 1/8 tsp. cayenne

Rest of the Ingredients:

  • 20-24 wings and drumettes
  • 2/3 cup Sue Bee Louisiana-Style Premium Barbecue Sauce with Real Honey
  • 2 Tbl. butter
  • 1/2 cup shredded extra-sharp cheddar
  • 1/2 cup shredded mozzarella or monterey jack cheese
  • 3-4 strips lean quality bacon cooked crisp and crumbled, as desired
  • 1/3 cup crumbled blue cheese, or to taste
  • 2 green onions, snipped

Instructions

  • In small bowl, mix seasoning well and sprinkle over both sides of wings and drumettes evenly.
  • Heat 3/4 of grill to high to get grates nice and hot. Turn heat down to low, oil grates with vegetable oil-soaked paper towel with tongs, place chicken pieces onto grill, close lid and grill for 15-18 minutes, turning 3-4 times. (*On cool side of grill, place sauce and butter in grill-proof pan and warm through, stirring in the butter.)
  • When chicken is almost done, start basting and turning often using almost all of the sauce. When done, remove to serving platter. (*Baste and grill at least another 6-8 minutes.)
  • Arrange nicely, sprinkle top evenly with cheddar and mozzarella, drizzle with extra sauce, sprinkle with bacon. Place onto a baking sheet, set onto cool side of grill, close lid and melt cheese. Remove promptly.
  • Garnish top with blue cheese and green onions.
  • Serve with ice cold beers and lots of good friends!
