Whenever my hubby goes away for business, I don’t eat very well. Usually. I just never care to cook for myself. I love cooking for everyone else but me!
So, I usually keep a frozen pizza on hand to play with so that I at least have some fun. And this time, I really had a blast! I found a container of leftover homemade pulled buffalo chicken meat in the freezer. Jackpot. 😉
Just this once, I was going to have fun all by my lonesome. 😉 And that I surely did! 😀 One ingredient idea led to another, and before I knew it, I had created quite a little masterpiece!
All starting with a simple, plain cheese, frozen pizza!
I happen to actually like Tombstone’s, but you can use whatever brand you like, or go all out and make homemade.
Since it was just for me, I was definitely not going to mess with making and rising dough and fiddling with sauce.
Along with the buffalo chicken, I decided to just go for it and added some crisp-cooked smokey bacon! Bacon makes everything better! 😉
And my new best friend, “kale”, was definitely going to join the party! Along with two more of my favorite friends, ripe black olives and grape tomatoes!
I’m a lover for hot and spicy, so just the buffalo chicken alone wasn’t going to even do it for me. I wanted more heat! So on went some fresh sliced jalapeños!
Since I didn’t want too many, but still wanted a nice fresh pepper taste, so the jalapeños were joined by some gorgeous red bell peppers, too!
And lastly, I gotta have me some onion on there! Love me some red onion! Mine was a gorgeous purple color and not harsh at all. THIS was going to be one heck of a good pizza!! 😀
Now that the top was covered, I didn’t want to just leave the veggies all naked! :O So, I decided to add a bag of Italian Blend white cheese to cover them decently! 😉
Then into the oven this masterpiece of a pizza went! I lowered the temp so that I could cook it longer to get everything to blend together better and not leave the veggies completely raw. *If your oven runs slow, you may want to keep it at 375, but mine seems to run a wee bit hot. So letting it slow down to 350 degrees while baking, worked out perfectly in my oven.
Just check yours towards the end, as you know your own oven and no 2 ovens cook exactly alike. And the time and temp will also determine how done the veggies get. A higher temp and less time will result in crispier veggies!
Didn’t it come out pretty?! I could hardly wait to slice into it! But I wanted to add one last topping that I really enjoy on pizza – – lettuce!
That fresh, cool, crunch of shredded lettuce is just the icing on the cake!
Believe me when I say, that this was one darned good pizza! 😀 I was so pleased with how it turned out! 😀
So no matter what your deal is….you too hate cooking for yourself, or you’re tired after working all day, you despise making pizza dough, or you want something quick for the teens for a party, or even something casual for your friends, this pizza will work and, trust me, will be very well received and appreciated by all! THE HOUSE SPECIAL BUFFALO PIZZA
Serves 4 (*or – slice thin or cut into small squares for appetizers)
1 frozen Tombstone Original Extra Cheese Pizza (12″ – 1 lb. 4.5 oz.)
1 1/2 – 2 cups pulled buffalo chicken meat, homemade or store-bought rotisserie tossed with hot sauce or wing sauce (*click to see my crock pot recipe)
4 strips quality lean bacon cooked crisp and snipped into small 1/2″ pieces (Wright’s works well)
1 large kale leaf, torn into bite-sized pieces
15-20 pitted black olives, sliced in half lengthwise
10-15 grape tomatoes, sliced in half lengthwise
1 large fresh jalapeño, sliced into thin rings, remove ribs and seeds if desired
half of a large red bell pepper, sliced and ribs/seeds removed
1-2 slices of a large red/purple onion, separate rings
1 (8 oz.) bag (2 cups) shredded Kraft Touch of Philly Italian 5-Cheese Blend cheese
1/4 – 1/2 cup blue cheese crumbles or chunks, to taste
1-2 cups shredded lettuce, to preference
salt and fresh cracked black pepper to taste
finely chopped or sliced celery, optional
sliced green onions, optional
drizzle with Ranch Dressing and hot sauce or sriracha, optional but so good!
DIRECTIONS:
Place oven rack on a lower position. (Not center.) Preheat oven to 375 degrees.
Place pizza onto foil-lined baking sheet or pizza pan.
Top with ingredients in order, except for blue cheese, lettuce, and optional ingredients.
Pop into oven and turn heat down to 350 degrees. Bake for 40-45 minutes until done and golden brown on bottom.
Remove from oven, sop up excess liquids from veggies around edge if needed, top with blue cheese and return to oven. Bake for 5 more minutes.
Remove from oven. Top with shredded lettuce. (*Sprinkle with celery and green onions if desired.) Sprinkle with a little salt and pepper to taste. (*Drizzle with Ranch Dressing and hot sauce of choice if wanted.)
Slice and serve!
