Boy, oh boy, oh boy, oh boy! Yet another year that my Chicago Bears have let me down! All they had to do was win one of their last two games. Didn’t even make the play-offs. Growl.
But! On the flip-side! My hubby’s team has made it all the way to the Super Bowl this year! His beloved Seattle Seahawks have been dominating this season and crushing their opponents like how football used to be played!
So this house will be watching and enjoying and rooting for The Hawks this year! It’s about time they had their turn, and always one to root for the underdog, unlike the media and NFL who seem to have monetarily become even more biased than ever before, WE will be watching and enjoying fully, a very deserving team!! GO HAWKS!
Show them that it’s about the sport, fairly played and executed, and that referees are not being paid to blow the whistle. That it’s about an entire team and not all about one person in a huge promotional commercial to rake in as much money as possible into too few of hands. And, most importantly, about all of us fans.
The fans that have supported and forever continue to support and watch their teams through thick and thin since early childhood. The camaraderie, the banter, and the true love of the sport itself is what it’s all about. 😉
Ok, …. I hope I didn’t lose any friends in rooting for the “other team” over my rant, but ALL teams, players and fans should be recognized and treated equally and fairly. I’m a stickler for rules and fairness. And I hope that the Super Bowl turns out to be a fun, fair and enjoyable experience for all and that no one gets hurt. All I ask. 😉 😀 Now…PLAY BALL! 😀
Ok so, THIS Super Bowl is going TO, at the least, rev up some highly VORACIOUS, Jurassic Park-sized, appetites!
My poor hubby is going to be losing it!
As I’m sure everyone watching will be as well!, so some pretty darned good food is going to be a MUST this year!
High intensity, nerve-racking-knuckle-biting, cheering and hollering burns a LOT of energy! So does dancing in the kitchen. Jus’ sayin’…
…so be sure to pack quite a punch when deciding what to make this Sunday! It’s going to be one heck of a game and, laugh if you will, but looking forward to the funny commercials as well!! Some of them are better than past Super Bowls! 😉
This hearty, meaty, extra cheesy – “OMG this is GOOD!” – sandwich will definitely satisfy even the rowdiest of guests and can even be made into sliders if smaller portions are a better game plan.
You can even “go long” for a Hail Mary and a Touchdown by creating this on one, big ol’ long, submarine-sized, 6-foot sandwich if having a crowd over, too!
Then just slice into 2-3 inch slices for easy eating and serving! (*If seriously making a 6-foot long sub, I envy your oven size and suggest multiplying my recipe times three.)
It’s a lot easier and less messy than traditional buffalo wings, and I’ve made them into one winning sandwich, that’s for sure! 😉
So no matter who you’re rooting for – don’t care one way or the other – just here for the beer – gossipin’ ‘n grubbin’ – or waiting for the funny commercials and the half-time show, this sandwich-hoagie-sub-slider will satisfy even the monstrous of appetites and make everyone do a dance in the end zone!

GARLIC-TOASTED BUFFALO WING HOAGIES
Serves 4
1 (20 oz.) bag Southwestern-Seasoned Chicken Breast Strips, (*or 3 large boneless skinless chicken breasts seasoned with salt, pepper, chili powder, cumin, and garlic powder / grilled and cut into strips), (*or 1 deli-style rotisserie chicken / meat pulled)
1/2 cup Frank’s Red Hot Sauce
4 Tbl. butter
1 Tbl. Sweet Baby Ray’s Barbecue Sauce
2 tsp. sriracha hot sauce
1/2 tsp. chili powder
4 hoagie rolls, split in half lengthwise
1 1/2 sticks butter, softened
2 Tbl. minced fresh garlic, can sub jarred for ease
2 Tbl. chopped fresh parsley
8 slices muenster cheese slices, (*can sub with havarti, provolone, co-jack, pepper-jack, fontina, white cheddar or mozzarella if preferred)
4 cups finely shredded lettuce
2 Tbl. finely chopped celery
Kosher salt and fresh cracked black pepper
12 thin slices roma tomatoes
8 Tbl. thick and chunky blue cheese dressing, store-bought or homemade
4 tsp. crumbled blue cheese, optional
DIRECTIONS:
In frying pan, combine chicken, hot sauce, 4 Tbl. butter, bbq and sriracha sauces, and chili powder. Heat until simmering over low heat, simmering until hot and stirring as needed.
Split hoagie rolls in half lengthwise. In small bowl, combine 1 1/2 sticks soft butter, garlic and parsley. Spread insides of hoagie rolls with butter mixture, (both cut sides.). Place open-faced on cookie sheet and broil until lightly toasted. Or about 4 minutes at 400 degrees.
Top each bottom half of hoagie rolls with meat mixture, (pile high), then top each with 2 slices muenster cheese. Return assembled bottoms to oven and bake 2 more minutes or until cheese has melted.
Remove from oven and top each with lettuce tossed with celery, a pinch of salt and fresh cracked black pepper to taste. Top each with 3 tomato slices. Then top each with 2 Tbl. blue cheese dressing and a tsp. of crumbled blue cheese if desired. Place on top halves of toasted hoagie rolls. Cut in half on the bias. Makes 4 hoagies.
*Note: You can make these with a purchased rotisserie chicken from your local grocery store, too! Just pick the meat off, and cut or shred it into pieces. Leftover roast chicken, even barbecued or fried, also works well for this. In a pinch, canned chicken (2-3 large cans) drained, also works, but of course, cooked or grilled chicken works much better!
**You can also make sliders out of these using dinner rolls or Hawaiian (slider-sized) Rolls.
***Ranch Dressing can be subbed for the Blue Cheese Dressing if preferred.
