Spicy Taco Wings with Chipotle Key Lime Dipping Sauce!

I so wish corporations weren’t so full of stinkin’ greed. “Wings” were pieces of the chicken that used to either be thrown out, or cooked down for stocks and broths. Now they’re very expensive due to their popularity when they became famously appealing little appetizers.

It’s sad, isn’t it?

The prices immediately skyrocketed.

No wonder so many people are raising chickens now for their eggs and meat to feed their families. What else can you do?? I’m considering it myself!

Anyways, on a brighter note, I love them, and so does my hubby. But he’s not into “buffalo” anything. So I try to come up with different ways to prepare them so that we can both enjoy them, and this latest creation was a hit!

All of the flavors of tacos, baked right into the wings!

So, starting with one rather odd ingredient. I wanted the breading to have a little extra boost of chicken flavor, so I decided to try adding a little chicken gravy mix into the flour mixture. It’s a very old, strange bottle that’s been in my cupboard forever. (Does this stuff ever go bad? Ha!) So, it was about time that I found some kind of use for it. And this actually worked really well! *If you don’t happen to have any, don’t worry about it. You can just leave it out if you wish. It won’t hurt anything if you don’t add it.

Now, you may look at the ingredient list, and say, “Uhm, nope. This is going to take too long!” But seriously, it’s just pantry ingredients that I gathered up in 12 seconds flat!

Just whisk them up with a little flour, and whisk up a nice, spicy egg bath, and you’re almost done!

Just toss the kids into the flour and roll them around to get them nice and “dirty”, then into the tub, then back into the flour to dry off, and bake!

You don’t even have to turn them! And just look how beautiful they come out!

Fall-off-the-bone tender, juicy, flavorful, and so silly-easy to make that it’s fun! 😀

We actually had these for a light supper as they were gigantic for wings and drummies, but you could most certainly bake these up for a March Madness party and serve them as appetizers! 😉 *9 of these monsters equaled 2 pounds!

Since this was for going to be for an actual meal, while the chicken was baking, I made up a tasty, cheesy, creamy batch of taco rice to go with!

I also made a quickie dipping sauce that was simply divine! This really made for a delicious and fun supper that I’m sure your whole family will enjoy! Or, a cool new twist on traditional wings and drummy appetizers that you and you’re friends are sure to love!

Taco Wings with Chipotle Key Lime Sour Cream Sauce!

Taco Wings with Chipotle Key Lime Sour Cream Sauce!

Ingredients

Taco Seasoning Mix:

  • 1/3 cup flour
  • 1 Tbl. powdered chicken gravy mix (optional, but worked well)
  • 1 tsp. seasoning salt, I like Johnny's (can sub your favorite seasoned salt)
  • 1 tsp. regular table salt
  • ½ tsp. cayenne
  • ¼ tsp. chipotle powder
  • 1 1/2 tsp. onion powder
  • 2 tsp. chili powder
  • 2 tsp. sweet smoked paprika
  • 2 tsp. garlic powder
  • 2 tsp. cumin
  • 1/2 tsp. sugar

Rest of Ingredients:

  • 1 egg
  • 1 Tbl. milk
  • 1 Tbl. hot or mild Taco Sauce
  • 10 extra-large chicken wings and drumettes (*2 lbs.), leave skin on but trim off fat

Basting Sauce:

  • 2 Tbl. butter
  • 1/4 tsp. garlic powder

Dipping Sauce:

  • 2 1/2 Tbl. sour cream

  • 1 tsp. taco sauce such as Old El Paso
  • 1/2 tsp. fresh or bottled key lime juice, I just use Nellie & Joe's
  • 1/16 tsp. each garlic powder, chili powder, cumin and salt
  • a few chopped oven-roasted sweet cubanelle pepper rings if desired

Instructions

  • Preheat oven to 375º F. Spray a 13x9 or 11x7 baking dish, set aside.
  • In two (doubled) brown paper lunch sacks, combine dry Taco Seasoning Mix ingredients, shake well to mix.
  • In shallow bowl, beat eggs, milk and hot sauce of choice.
  • Drop chicken pieces, one at a time into bag and shake to lightly coat. Shake off excess flour mixture, dip chicken pieces in egg mixture, let excess liquid drip off, then shake in bag of dry ingredients again. Place into prepared baking dish as you go.
  • Bake, uncovered, at 375ºF for 25 minutes. While baking, melt butter and garlic powder in small pan. After 25 minutes, baste with butter mixture, and continue to bake for another 25 minutes, or until chicken pieces are done and juices run clear.
  • (*If pieces are small, they will take less time, of course, so check on them). Don’t over bake it.
  • Now kick back, have a beer, relax and don’t worry about it!
  • It doesn’t stick or even need to be turned! (Don’t turn it BTW).
  • Prepare the rest of your sides and…ENJOY!
  • Serve hot with dipping sauce.
  • To make dipping sauce, whisk ingredients together in small bowl, then chill until needed. (I do this while the chicken is baking for the last 25 minutes).
  • Notes

    *I buy one can of Chipotle Peppers in Adobo Sauce, dump it into the blender and puree it. Pour it into a ziploc freezer baggie and freeze it. Then, when I need some, I just break off the amount needed, thaw it and use! Easy, and goes a long ways!!
