Ingredients

1 frozen pizza (I used a Tombstone 5 Cheese Pizza)

2 - 2 1/4 cups pulled smoked bbqed pork (10 oz.)

1/3 cup bbq sauce (I used Sweet Baby Ray's Sweet 'n Spicy)

oven roasted cubanelle (1 medium sweet red one)

oven roasted onion (half of a large)

pizza cheese to moderately cover, (I used about 1 cup Sargento's shredded Off the Block 5 Cheese Pizzeria blend)

1 cup shredded lettuce
-
1 cup quartered grape tomatoes

garlic salt & pepper to taste

my homemade JalapeƱo Cowboy Candy (or pickled/candied jalapeƱos), as many as you can handle

crisp-cooked bacon, crumbled (or REAL bacon bits), as desired

drizzle of barbecue sauce
Instructions
Preheat oven to 400º F.For Peppers and Onions: Julienne peppers into thin strips, thinly slice half of an onion. Place onto sprayed foil-lined baking sheet, spray top well, bake for 25 - 30 minutes. Remove and set aside. Leave oven on.For Smoked Pulled Pork: Tear pork into bite-sized pieces into a medium bowl, stir in barbecue sauce. Do not heat.To Assemble Pizza: Unwrap frozen pizza, (remove from cardboard), and place onto a round pizza baking sheet. Top with barbecued smoked pork, roasted peppers and onions, and shredded cheese. Pop into oven and bake (at 400º) for 14 - 16 minutes. Remove from oven.While pizza is resting, top with shredded lettuce and tomatoes. Sprinkle with a little garlic salt and pepper to taste. Top with Jalapeño Cowboy Candy rings and crumbled bacon. Drizzle with more barbecue sauce.Slice, and serve with an ice cold beer. Enjoy!
