Ragin' Cajun Spicy Potato Wedges

Ingredients

  • 1 lb. potatoes, (russet, red, or Yukon Gold), unpeeled and cut into wedges
  • 1/4 cup zesty-style Italian Salad Dressing, (v/o kind not creamy-style)
  • 1 tsp. coarse ground black pepper
  • 1 1/2 tsp. "Slap Ya Mama" cajun seasoning, *see note
  • 1 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1/2 tsp. sugar
  • more salt if desired

Instructions

  • In medium-sized bowl, whisk all ingredients except potatoes until mixed. Add potato wedges and toss to coat.
  • Place potatoes in a sprayed 13x9 baking dish or foil-lined baking sheet, (pointed, cut-sides facing up. *Then you won't have to stir them during baking). Drizzle any extra dressing mixture over potatoes).
  • Bake in preheated 375º F oven for 35 - 45 minutes until the outsides are lightly crispy and the inside are tender. Time will just depend on how thick your slices are. I cut mine less than an inch thick. Just check them with a knife is all.
  • Taste, and season with a little more salt if desired.
  • Enjoy these tasty potato wedges as is, or serve with a little sour cream for dipping!
  • Notes

    *These were nicely spiced for us as is. But if you'd like them hotter, just sprinkle on more cajun seasoning once you get them all laid out (after tossing), standing up, on the baking sheet. A little goes a long way, though, so be careful adding more. Add less, of course, for a milder taste.
