Cheddar Ranch 'n Chive Mashed Potatoes

Ingredients

  • 4 medium-sized russet potatoes, peeled and cut into thirds
  • 1 tsp. kosher salt (add to cooking water)
  • 6 Tbl. butter
  • 1/4 cup milk, half and half, or cream
  • 1 cup shredded cheddar cheese
  • 1 Tbl. + 1 tsp. dry Ranch Salad Dressing & Seasoning Mix
  • 1 1/2 tsp. dried chives
  • 1/4 tsp. coarse ground black pepper
  • 1/8 tsp. garlic powder
  • 1/2 - 3/4 tsp. kosher salt, or to taste

Instructions

  • Peel and cut up potatoes and place into a pot of cool water. Bring to a boil over high heat. Turn down to a nice steady boil, and cook 20-25 minutes until tender. Insert a knife through a potato chunk. If there’s any resistance it’s not done. If it goes through easily, like butter, they’re done.
  • Empty potatoes into a colander, remove 1-2 chunks at a time with a fork to pick them up, add to your ricer, and press them through into a large bowl. When all the chunks have been riced, add your butter, milk, cheese, Ranch Mix, chives, pepper and garlic powder. Stir just until creamy.
  • Check seasonings. Add salt, for example, to taste.
  • Place into a serving bowl, *or a sprayed casserole dish with lid if holding until later.
  • Garnish with small pats of butter, paprika and pepper if desired. Serve hot.
  • Notes

    *If wanting to make these 1-2 days ahead: Place prepared potatoes into a sprayed or buttered baking dish, cover and chill.When ready to bake, remove from refrigerator and let sit on counter for at least an hour. Longer is ok, too. Nothing is going to spoil. Preheat oven to 350ยบ and bake, covered, for 35 - 45 minutes or until heated through. Remove, stir, dot with small pieces of butter and sprinkle with paprika if desired. Serve hot.
