Well, oops. Another blog that slipped through the cracks during the busy holidays!! But these classic Cocoa Oatmeal Bites with Cinnamon, Espresso & White Chocolate Drizzle can be enjoyed year round, are a snap to make, and the “newest” breakfast and snack craze being chocolate! So I hope that you enjoy one last, almost forgotten, “holiday” post!
The holidays are over. But my tree is still up! It’s one of the prettiest trees I ever, ever had, and just don’t have the heart to take it down quite yet. The first week of January, I’ll carefully preserve everything for next year. But for now, I’m just going to enjoy it!
All of the holiday goodies are slowly disappearing, and my homemade cookies and candies are now all snuggled together into one, last, small container. The most that remain, are these. First clue….my hubby won’t touch them. They’re “healthy”. So they’re mine. Aaaaaaallllll miiiiine!! 😀 And I have been enjoying them immensely! Not only as a relived childhood favorite, but also one (or a few!) every morning for breakfast!! Yep. Why not, right? They have less and all-natural sugar, less sodium, less additives, preservatives and fake ingredients than MOST “health bars”, granolas, “weight-loss” and supplements, shakes and drinks. If not ALL of them. They’re loaded with old-fashioned oats, and have enough natural sugar and natural ingredients to satisfy you, so that you’re full, and don’t even want to eat anything else and binge later! Plus, they’re easy to just grab on the go! Nothing to cook! So, what’s so terrible about that, right? And, as far as what I have been reading lately, chocolate, in one form or another, is the “newest” craze for breakfast! (Gosh, I could’ve told them that years ago! 😉 )
I made these “regular-style” with just oats, as my hubby informed me that these are not something that he ever personally cared for as a kid. So I didn’t add anything else as these were to be a quickie breakfast thing for me. But you can certainly play with this a little if others in your house love them, too. Cut back on the oats a bit, and replace them with things like raisins, nuts such as peanuts, almonds, pistachios, cashews, (or a palmful of those “mixed nuts” in the can that came in that gift basket you got last week!), dried and snipped fruits, coconut, chopped and drained maraschino cherries, whatever you have on hand or your heart desires!
Just just plain ole regular, the kind we made as kids, do perfectly fine, too. 😉
Since I was in a festive holiday mood, I did take these one step further, just for fun, and drizzled some melted white chocolate almond bark over them to make them pretty!
I wish my hubby liked them, too. But it’s kind of a “sorry, not sorry” thing. After all, I get to enjoy them all by my little self! (Other than the ones that I shared with the neighbors, of course!) But the rest. ALL mine!!
These make for wonderful breakfast bites, after school treats, bake sale treats, class treats (*so long as peanut butter hasn’t been banned), and a nice little mid-afternoon treat that’s healthy and homemade! And did I mention….they’re super easy to make, too? 😉
